Tomato Mozzarella Shrimp Pasta

 1 lb angel hair pasta
 2 lbs cooked, peeled, and deveined shrimp
 6 cloves of garlic
 8 medium tomatoes, diced (or one 16oz can)
 2 cups chopped spinach
 1 lb mozzarella cheese, shredded or finely diced
 1 finely chopped onion
 6 tbsp fresh oregano
 8 tbsp olive oil
 6 tbsp chopped fresh basil
 salt and pepper to taste

Bring a large pot of lightly salted water to boiling. Add pasta and cook for 8 minutes or until tender. Drain.

Combine garlic, onion and oregano in a food processor and pulse until finely chopped. Heat olive oil over medium heat in a large skillet. Add onion mixture, cook and stir until fragrant and almost golden. Mix in tomatoes, basil, salt and pepper. Simmer for 5 minutes while the pasta is cooking, and occasionally stir.

Mix in spinach until it wilts, then stir in the shrimp just before pasta is done. Cook until it is thoroughly heated. Mix with pasta in a large serving bowl, and mix in mozzarella cheese.
