Homemade Ricotta cheese
In one of my homesteading groups on facebook, someone mentioned a super easy and “delicious” cheese recipe, so I had to give it a try and see if it was something the kids would like. It really WAS easy!
- 1 gallon milk
- 1/2 cup vinegar
- salt to taste
- Cheesecloth
- Bring the milk to a boil
- Remove from heat and add vinegar
- Stir until it curds evenly
- Add salt and stir again
- Pour into cheesecloth (I put the cheesecloth inside of a strainer first)
- Squeeze out as much liquid as you can, tie off the cheesecloth and let sit in the fridge for an hour or two. Once hard, remove cheesecloth and enjoy!
It tasted like Ricotta though, so it isn’t something that we would want to eat by itself, which is what I was hoping for. That’s perfectly fine though, since Ricotta tends to cost way more than this did to make. I will be using this recipe for our lasagnas and stuffed shells from now on!
